Mango Pineapple Frozen Whip

This dairy-free dessert is reminiscent of the frozen fruit whips served at Disney resorts. Mango and pineapple blend with coconut cream for a light, creamy treat that tastes like sunshine.

Serves: 4

Ingredients

  • ¼ cup coconut cream solids
  • 1 cup frozen pineapple
  • 1 cup frozen mango
  • 2 tablespoons honey
  • 1 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. Refrigerate a 13.5-ounce can of coconut cream overnight. Open the can and scoop out the solids that have risen to the top. Measure ¼ cup.
  2. Combine the coconut cream, frozen pineapple, frozen mango, honey, lemon juice, and salt in a blender. Blend until smooth.
  3. Spoon the whip into a piping bag and swirl into bowls. Top with fresh fruit, if desired.

Optional: For a firmer, more frozen texture, tie the filled piping bag with a rubber band and freeze for 30 minutes before piping.
